happy ocho de mayo!
tres days ago, our little family had a festive and low-key cinco de mayo celebration. no special dinner out or anything too fussy, not this year. and especially not this week. and especialmente not this monday. but, no matter how full the day or wild the week, we aren’t ones to let a day of fiesta go by completely unacknowledged. not when there are dips and chips to be had.
and let me tell you, there is something kind of magical about mexican food after a busy day. the salsa was spicier. the chips, saltier. and the beverages, more refreshing. oh, and creamy dreamy beans weren’t too shabby either.
we sat down together and got the cinco playlist cranking. elinor bopped along.
we dipped chips into super limey gauc and lit up our taste buds with some extra spicy salsa. oh, and creamy dreamy beans.
hubby popped the top on a negra modelo and i sipped my mojito kombucha. elinor enjoyed her almond milk and coconut cream to cut the spice. the grown-ups swapped stories from the day. and elinor babbled along, interjecting a perfectly timed laugh when mama or papa said something laugh-worthy. that little one and her comedic timing. seriously.
we sure do love a theme-meal around here. and elinor totally digs it. i am pretty sure that her favorite tunes are irish pub songs and mariachi music. i am pleased as punch that she seizes the opportunity to celebrate. that will serve her well.
